Taking cues from the letter ‘S’ and the best of WA produce, head chef Scott Bridger and the Bib & Tucker team has created a menu around the finest WA seasonal ingredients as part of the WA Good Food Guide’s Spring ABCs Dining Series.
His menu starts with a pair of snacks, one a dish of wood-fired south west Akoya oysters with smoked oyster cream and sea lettuce, the other shiitake mushrooms grilled over coals and served with seaweed XO sauce and crisp chicken skin.
The ‘S’ entree is a treat; scallops from Abrolhos Island served with brown butter and finger lime, before a main course of Suffolk spring lamb with skordalia and salsa verde.
Dessert, meanwhile centres around Halls Dairy Suzette cheese dressed up with macadamia honey and tempura saltbush.
Bridger’s one-off menu will be served with wines from The Alchemists in Margaret River, chosen to match with the dishes. Together, it’s a tribute to the WA spring produce, rendered in Bridger’s own exacting style.
