INGREDIENTS
1 cup AP flour
1 cup rolled oats
1/2 cup sugar
1/2 cup desiccated coconut
125g butter
2 tblsp golden syrup
1 tblsp water
1/2 tsp bi-carb soda
METHOD
Pre-heat the oven to 175. Sift flour into bowl, add sugar, oats and coconut. Melt butter in saucepan, then add golden syrup and water. Stir in bi-carb into the melted mixture it will bubble up a bit. Add the liquid mix to the dry ingredients & mix thoroughly. Shape the cookies into balls with your hands and then flatten down on parchment paper on a baking tray. Bake for 15-20 mins until soft but golden, biscuits will harden as they cool. Yum!
